Blu Lobster: A Shangri-la Hotel restaurant that chef Brian McKenna made famous with his creative cuisines, including a 42-item salad. I once sat at the chef’s table and could barely move after finishing, what, 15 tiny courses. They add up. McKenna went on to many other projects, including ROOM and The Courtyard, and is now consulting on a massive project in Saipan.
